Recipe: Slow Cooked Lemon Pesto Chicken
It’s that time of the week again – time for another recipe for healthy living, using my favourite cooking device. This time is it lemon pesto chicken – great for the summer!
The slow cooker not only makes everything taste amazing, but I find it so much easier and less stressful to cook a meal this way. There’s much less washing up at the end of the meal, and once it’s in the slow cooker you can leave it there.
This recipe is a really refreshing one – it tastes like summer in your mouth. My other half and I really love it, and look forward to it every time. It’s really simple, doesn’t use many ingredients, and can be served with whatever you feel like. We prefer pasta but it also goes with rice or potatoes if you fancy.

Simple Lemon Pesto Chicken Recipe
So, here it is:
Ingredients:
1 boneless chicken breast per person
1 cup chicken broth
1/2 cup of basil pesto (any one will do – I use ASDA’s own)
1/4 cup lemon juice, freshly squeezed
1 onion, chopped into chunks
1 pepper, chopped into chunks
Method:
Firstly you want to put all the liquids into the slow cooker. This way you can combine them all before putting in the larger bits. Stir together the chicken broth, pesto and lemon juice until combined.
Then place the chicken breasts in the middle of the slow cooker, and pour some of the liquid over the top of them. Turn the slow cooker on low and cook for 8 hours.
Half way through cooking, turn the chicken breasts and place the onions and peppers around the slow cooker – try to cover them all in the sauce.
Serve with your choice of accompaniment.
If you aren’t home to turn the chicken and add the veg it’s not a problem. You can put everything in from the start and leave it for the full 8 hours, it will just mean the onions and peppers will be cooked a bit more, and the lemon flavour may not penetrate the whole of the chicken. I’ve done it both ways, and it’s fine either way!
And there you have it – yummy and refreshing lemon and pesto chicken!
If you don’t yet own a slow cooker then I can definitely recommend this one, it’s the one I use and it’s not let me down yet!

I recently moved from the east coast back to the west coast, so I’m still going through moving boxes right now and haven’t been able to locate my slow cooker. Once it reappears though, I’m definitely looking forward to making this! *-* I love recipes that don’t require a whole lot of prep work!
