I’ve never been a breakfast person. I know, I know, that’s bad! But I’m just not hungry in the morning and I don’t really enjoy the normal breakfast foods.
I’ve recently discovered a breakfast meal that I truly enjoy, that isn’t a fry up. As much as I’d love one of those every morning!
This easy breakfast sheet pancake may not be the most healthy option for breakfast, but I am at least having something every morning now!
I make one large sheet on Saturday morning when I wake up, and then I heat a slice up every morning so I get a delicious warm fruity pancake every day for my breakfast.
Without further ado, here’s how you make it!

Delicious fruity breakfast sheet pancake
3 tbsp butter
1 1/4 cups milk
1 1/2 cups plain flour
1 tsp baking powder
3 tsp sugar
Frozen fruit (or topping of your choice)
Preheat the oven to 200 degrees (celcius).
Grease your baking tray of choice. I usually use my glass dish, and grease the sides with butter as well as using baking paper to help me pull it out of the dish. Just make sure you grease the paper with oil as well to avoid it getting stuck! (you can also use a metal baking tray for this recipe)
Melt the butter and add the egg and milk. Stir to combine.
Add in the flour, sugar and baking powder, and mix together. It doesn’t need to be perfectly mixed, I’ve been advised that it’s good to leave some lumps in for this recipe!
Pour the mixture into the tray and spread evenly.
Sprinkle as much of your topping onto the pancake as you like. I usually use frozen summer fruits, but you can use any fruit or even chocolate chips if you want! This recipe is fully customisable.
Then, bake for about 20 minutes, until the pancake is set.
Let cool slightly and enjoy!!
