Recipe: Slow Cooked Mexican Beef
Following my last post about how much I LOVE my slow cooker, I thought it was only right that I share some of the recipes I’ve used so that all of you out there can love your slow cookers too!
First up is a delicious recipe that I just loved making (and eating).

Slow Cooked Mexican Beef Recipe
I loved this recipe. We use it for beef burritos, wrapped up with salsa, homemade guacamole, rice and cheese. But you can have it on top of a potato, just with rice, in tacos, with anything really!
It only takes about 10 minutes to prep, and can be left in the slow cooker for up to 8 hours. (I wouldn’t recommend any more than that as the beef can get quite hard, and it doesn’t taste as good!)
What You’ll Need
- 400-500g of beef diced.
- 3 cloves of garlic, minced.
- 2 small onions, or one large.
- 1/2 tablespoon tomato puree.
- 1/2 teaspoon chilli powder (or more if you like it spicy!)
- 2 teaspoons cumin.
- 1 teaspoon smoked paprika.
- 1 teaspoon cayenne pepper.
- 1 teaspoon oregano.
- 1/2 teaspoon parsley.
- 1 1/2 cups of beef stock (I just use Bisto granules dissolved in water).
- 1 tin of kidney beans (this is optional).
- 1 pepper, chopped.
How to make
Many recipes advise you to cook the beef in a frying pan first to seal the edges, with the onions and garlic and little bit of oil – so if you have the time I do recommend doing this. However, I never do because for me that’s just extra energy used and extra washing up (which means more energy).
So if you don’t have the time or just can’t be bothered, it is okay to skip this part!
Throw all the ingredients in the slow cooker, except for the beans and the peppers. Mix it all up well so the stock and the tomato puree are combined. Then turn the slow cooker to low for 8 hours, or on high for 4 hours.
If you’re at home, try to stir the mixture about half way through to prevent burning.
An hour and a half before the end, use two forks to shred the beef. Then add the beans and the peppers and stir. Leave for the remaining hour and a half, then it’s ready to serve! If you don’t have that much time, you can put it on high for about 15-30 minutes to cook these final bits.
Then you can serve it with whatever you want!
Bon appetite!
And if you don’t yet own a slow cooker I cannot recommend this one enough, it’s the one I use and it hasn’t failed me yet!

I have a version of this I make in the Instapot for when I forget to get it in the slow cooker in the morning. Love it!

Sounds delicious! I don’t have a slow cooker but I’m seriously considering getting one. When I do, I’ll have to try this!
